At La Scolca, the harvest is a celebration of nature and precision. Handpicked at the peak of ripeness, the grapes are carefully gathered into small baskets to preserve their integrity. Within 30 minutes of harvesting, they arrive at the cellar, where meticulous care ensures every bunch begins its journey to becoming exceptional wine.
The harvest process reflects La Scolca’s dedication to quality. Grapes are softly pressed using modern pneumatic presses, and fermentation occurs at a controlled temperature of 13–14°C to preserve their aromatic freshness. The unique sur lie technique further enhances the wines, delivering complexity and balance while allowing minimal use of sulfites.
The harvest takes place at perfect ripeness, often earlier than the regional average. Within 30 minutes, the freshly picked grapes reach the cellar, where they are cooled if temperatures are high.
The grapes are gently pressed using modern pneumatic presses, ensuring the integrity of the bunches. Fermentation is carried out cold, at approximately 13–14°C, in temperature-controlled stainless steel tanks. This method preserves the freshness and aromatic complexity of the grapes.
The cold winemaking technique is designed to respect the integrity of the fruit, maintaining 100% of the “aroma precursors” from pressing to fermentation, which occurs sur lie. This system also allows La Scolca to keep grapes from vineyards of different ages (ranging from 5 to 60 years) separate, using a computerized flow control system to preserve the distinct characteristics of each parcel.
