The Harvest
This is the philosophy of production: excellent grapes are needed to obtain an excellent wine.
The harvest takes place at the moment of perfect maturity of the grape, usually earlier than the average of the area.
The technique of cold vinification allows the maximum respect of grapes, keeping unaltered the berry qualities of 100% of the “precursors of the aromas” from the moment of pressing until the fermentation.
Moreover, the system allows to respect the origin of the grapes coming from different vineyards, of different ages (from 5 to 60 years old), keeping them separated with a computerized that controls the musts flow in order to distinguish fractions and origins.
So we can offer a wide range of products with different intensities and aromas.
